Dry Sooji Ka Halwa
Sooji ka halwa is a quick, easy, and delicious sooji ka halwa often made in most Indian homes and my dwelling. Pudding is made out of fine semolina or cream of wheat, ghee, sugar, and nuts. In India, cream of wheat is known as sooji or rava.
- 1 cup suji / Semolina
- 1/2 cup ghee
- 1 cup sugar
- 1/2 tbsp cardamom
- 2 cups water
- 5-6 Almonds (Chopped)
- 15 cash nuts (Chopped)
- 10-12 Raisins
(a)- turn the hot water to the hot rava pan stirring constantly. Be cautious as it splatters.(b)- keep the flame medium and keep going until all the water is consumed.(c)- Sheera is thick at this phase.(d)- Cover and cook on a low flame for 2 to 3 minutes.(e)- Add the sugar and cardamom powder. (f)- Mix well to dissolve the sugar. It dissolves and makes the whole sheera gooey.(g)- inside a moment, the gooey sheera turns thick again.(h)- keep stirring until it starts to leave the pan.(I)- When it melts, fluff up using the spatula.(j)- Transfer to serving bowls and garnish with cashews nuts, Almonds, and raisins.(k)- you could also press down it in a small bowl and invert the serving dish.
Make this pudding only in ghee. Oil doesn't function well in this recipe. Roast the Sooji in ghee on low heat till it becomes fragrant and slightly golden brown. Don't roast it on high fire, as it might get burned. Water should be hot while adding to the pudding.
Make sure the Sooji roasted nicely. Otherwise, the pudding will not taste great. It is possible to use grated jaggery instead of sugar to make this pudding. It'll be healthier and richer in taste. Add some cardamom powder or crushed cardamom for an exquisite flavor.
Serve warm pudding at breakfast.
Alternatively, allow it to sit for a few hours, cut it into pieces, and serve it as a dessert.
