Navratan-Korma Recipe in White Gravy
Korma recipe is considered the finest of all Indian cooking. The most common dish is the red karate, which is a traditional preparation for this delicious delicacy.

(c)- In a bowl, add oil. When hot, add cumin seeds, bay leaf, cardamom, cinnamon and cloves.
(d)- Add the onion-cashew mix and cook for approximately 5 minutes.
(e)- Add coriander powder and cumin powder. Mix well and cook till vegetable oil oozes out.
(f)- Add green chillies, a cup of water and bring it to a boil.
(g)- Add vegetables, Indian Beans and green peas.
(h)- Garnish Vegan Korma Navratan with raisins and nuts and lemon, Pomegranate, Pineapple if using.
(i)- Serve roti or rice.

TIPS NAVRATAN KORMA
(a)- Adding Pineapple, Pomegranate is optional. Nonetheless, it brings a great flavour to the dish. However, add it just just before serving. It also turns the curry bitter.
(b)- Don’t boil the vegetables at precisely the same time. Each has a different cooking time, and it will get mashed if not cooked at different intervals.
(c)- You can add other spice powders, but the korma is generally light in flavour.
Navratan Korma recipe
Ingredients
- 200 grams of cubed potatoes
- 200 grams of cauliflower (gobi)
- 200 grams of cubed carrots
- 100 grams of chopped indian beans
- 200 grams of cashew nuts
- 2 onions, finely chopped
- Vegetable Oil
- 3 cups of water
- 1 bayleaf
- 2 cloves
- 2 cardamon
- 1 inch cinnamon stick
- 2 green chillies, slit
- 1 tbsp cumin seeds
- 1/2 tbsp cumin powder
- 1 tbsp coriander powder
- Salt, as required
- A handful of chopped dry fruits like cashew nuts, almonds and raisins
- 1/2 cup of pineapple
- 1/2 cup of Pomegranate

Notes
- Make sure you cut the vegetables to roughly equal sizes.
- Do not miss the vegetables smaller than an inch or inch and a half-sized pieces or they'll get mushy.
- This curry is on the sweeter side. If you want to make it spicy, add more of red chilli powder to spice this up. You can even add some additional green chillies.
